With memory getting better, chatbots can replace note-taking tools quite easily in the future. If you want to find gaps in your thinking, knowledge base LLMs are the best alternatives to manually linking ideas. PS. You need research skills to efficiently adopt AI. Note-taking is mostly documenting human hallucinations.
